Bob and Kathy Dodge are brewers who have a special fondness for the complex and bold flavor of Belgian-style ales.

They also have a yen to open their own brewery, specializing in Belgian, ales of course.

The project is now on its way: The Dodges recently purchased about 18 acres near the intersection of Route 175 and Bussey Road in the town of Onondaga, where they plan to build and open Red Hawk Brewing Ltd. next year.

The brewery will join the surging number of craft beer companies in the state and in Central New York – including the new Double Barrel Brewing Co., which opened in Eastwood last November.

The Dodges believe they’re a perfect fit: They intend to operate a farm brewery, using a relatively new type of license created by the state to reward brewers who pledge to use New York-grown and produced ingredients.
